Beets are everywhere these days and it’s never been easier to sneak ‘em on your plate

Gone are the days of having to suck it up and stomach the taste of irony beets for those who don’t love the vibrant antioxidant packed root vegetable. It’s easier than ever to sneak them in with surprisingly delicious trending eats like beet hummus and lattes. I’m rounding up my favorite ways to get your fix.


  1. Beet Nice Cream

This is one of my favorite recipes I shared with Edible for sneaking in veggies! It uses coconut milk to make it a dairy free “ice cream” with a base of frozen beets and bananas.

2. Beet Warm Cereal Bowl

Beet powder makes it easy to stir the root veggie into just about anything. I love it mixed into a warm breakfast bowl made with oats, or Cream of Buckwheat like the one pictured here.

3. Beet Grain Salad

Beets taste best when paired with the right crunch. Try them in a grain salad with roasted nuts and some crunchy cinnamon chickpeas in this sweet and savory favorite.

4. Beet Falafel Balls

Try adding beets to your baked or fried chickpea balls next time you’ve got them in the food processor. This recipe I wrote for Edible is a tasty gluten free, vegan and antioxidant packed take on this mediterranean favorite.

5. Beet Hummus

Leanne from Crumb Top Baking has the most flavorful beet hummus recipe I’ve ever tasted! I love this as a dip with crackers or veggies, spread on a sandwich, wrap or dolloped onto a salad.

6. Beet Kraut

I was never a fan of cabbage sauerkraut so discovering that I can reap the benefits with beet kraut was a gut health game changer. Love adding it to salads, veggie plates and tacos like these Braised Short Rib Tacos shared by Wellpreneurs The Farmer and The Foodie.

7. Beet Smoothie Bowl

Blending steamed, then frozen beets with avocado and chocolate makes for a delicious smoothie bowl! I love purchasing the already steamed, vacuum sealed beets and sticking them in the freezer.

8. Beet Latkes

9. Beet Latte

Try making a beet latte with beet juice or beet powder blended with hot water and your favorite milk or nut/coconut butter. Recipes like this one are a great way to enjoy a delicious decaffeinated drink.

10. Pickled Beets

I spent my whole life hating pickles until I discovered pickled beets! Their sweetness takes the edge off the overwhelming vinegar taste the usual cukes have. I love picking them up from our farmers market and using them in dishes like this Spicy Sesame Bowl.
