8 Best Louisville Restaurants for Take Out Salads

All I want is a GOOD freakin salad, and I want it delivered. But… actually. The struggle was so real when we moved here from DC. I went to having healthy fast casual GOOD restaurants on every corner to basically zero options for quick, clean takeout. Hence why I started cooking more and getting really into creating easy, healthy meals!

But… during postpartum and COVID it became unsustainable to be preparing myself quick healthy meals all the time. I have had to start relying on more takeout. Thankfully I have discovered more options over the years, while Louisville has also grown and evolved to have more options. Here is a round up of all my favorite places to get take out salads! I say favorite places and not favorite salads because since many of these restaurants change their menus seasonally, by the time you read this, they may have a different, just as tasty menu item! At the time of this blog post, all of these restaurants currently do either curbside/contactless pick up or delivery.

Duh… I mean this is the obvious choice, right? You all know this is my go to and always has multiple salad options on the menu. My current favorite is this Berry Salad with arugula, pistachios, feta, strawberries, blackberries, honey-lime vinaigrette. Where should you go in Louisville if you’re craving the perfect Cobb? Bluedog… I know you don’t necessarily think of them for their salads since they’re famous for their bread, but their salads are equally delicious. Lately their Cobb Salad sub tuna salad for chicken salad (their spicy tuna salad is so good!) is my order. I also love the Grapefruit and Avocado Salad with a side of smoked salmon.

    Noche Mexican BBQ

    What, Mexican BBQ doesn’t make you immediately think salads? It took me a couple tries before I figured out that yet another Mexican restaurant, was actually the home of a Unicorn status gorgeous and delicious salad. Their menu has changed twice since I discovered this hidden gem of a “salad spot” and all pass the test. I like to add carne asada or shrimp and an app of their poblano guac. The salad pictured here is the Queso de Cabra with mixed greens, spicy balsamic grilled peaches, fresh berries, red onion, heirloom cherry tomatoes, raspberry serrano vinaigrette, homemade goat cheese fritter.

    Mayan Cafe

    This may be my all time favorite restaurant in Louisville. I was devastated when they had to temporarily close and am so glad they have been able to reopen! They used to only have one salad at a time but currently have two that both make me droooool thinking about: Spicy Jicama Salad and Kale Salad. Can’t not order a side of their famous Lima Beans and I’m also obsessed with their Sikil Pak (pumpkin seed dip).

    Wiltshire Pantry Bakery and Cafe

    Wiltshire just makes my heart happy. The owner, Susan is an absolute gem and beam of light in this city. Their freshly baked breads, daily soup specials and creative pastries make them the quintessential bakery/cafe meets innovative restaurant. I can never decide what to get at Wiltshire, so I’m glad that they cater towards indecisive food decision makers like me and have half soup/half salad and half sandwich/half salad options. Their menu is always changing, but there’s always several locally sourced salad options and a “Hippie Bowl” which is a vegan bowl with some sort of grains/legumes and veggies. Here is a Hippie Bowl with quinoa, hummus, beets, pistachios and local greens. I added on salmon.

    Galaxie

    The salads may get overshadowed by their “Wakatakas” (their take on flatbread meets taco), but they are one of our go-to spots for greens! I am all about the Avocado Chicken Salad, but love the sound of the Strawberry Grain Salad and Black Bean Bowl. I can’t go there an not order a side of chips and Wakamole (their chips are hands down the best in town).

    Caffe Classico

    This place is so underrated! I had been forever ago and forgot about it, but recently it’s become a staple in our house! Fist of all… their salads come with Blue Dog bread… so there’s a win already! The actual salad bases are pretty basic, BUT I love that their salmon is super tasty which you can add on. It also is the perfect spot to do salad and pizza because they have tasty pizzas as well! Okay, one more thing- their empanadas are good too! It’s the perfect place that has something for everyone- simple, straightforward and everything always tastes good.

    Louisville is still missing a lot in the food scene (umm sushi where art thou??) but one thing we are not lacking is good and quick Mexican. This place has several locations that I frequent and is my perfect dream come true taco salad. The Crunchy Mexican Ensalada has roasted cherry tomatoes, pickled red cabbage, carrots, onion, avocado, cilantro, beets, lime-cilantro Agave vinaigrette, arugula, queso fresco, crispy tortilla strips, radish and pumpkin seeds. I get it without the cheese and use their mild hot sauce as my dressing! I also add their carne asada or grilled chicken and a side of chips/guac (obviously).

    Delicious and Easy Whole 30 Recipes

    I can’t believe I am doing Whole 30 for the first time! I eat super similar to Whole 30 on a regular basis, and have done several 30 day stints of clean eating in the past- but never the official Whole 30 protocol. The biggest difference for me are 1. I typically eat a limited amount of, but some grains and legumes 2. I am a major proponent of finding and creating the healthy, allergen friendly version of treats. The latter is the main reason I’ve questioned it in the past. I didn’t understand what the point was of not being able to make the Whole 30 version of things like pancakes, cookies, etc. I get that. the point in theory is that it will get someone who is used to eating a lot of processed food into the habit of eating more whole foods, but figured that was a moot point for someone with typically healthy habits.

    This year, I am trying my best to SIMPLIFY things in my kitchen. So honestly, the thought of sticking to whole foods seems like it will force me to eat LESS ingredients and more homemade, easy recipes. My goal with the transition into motherhood is to keep up with eating the foods that make me feel good, but know that will be a major challenge. Getting used to and in a routine of cooking more basic now will definitely help!

    This time of year can also come with the pressure of a diet or cleanse, which is not my style. I like to do a clean eating reset times when it fits into my life and I feel excited and good about it. That’s why, rather than starting right away, I am waiting until after I travel to LA this week so that I can enjoy my time there and do it at a time that feels more like it’s on MY schedule, serving me best and not something I am “forcing” myself to do.

    My plan was to choose some of my recipes and products that would be my go-tos while I do Whole 30, and figured it made sense to share so that anyone else doing it now or in the future can have some recipes on hand too.     Creamy Pumpkin Artichoke Soup

    I am such a soup lover for so many reasons! They are soup-er (had to) easy to make, always satisfying, and great for prepping for busy weeknight meals or lunches. Being prepared is definitely going to be my priority during Whole 30, so I don’t get stuck without any good options. I love how thick, filling and protein packed this soup is- can totally be a whole meal, unlike many store bought or restaurant soups.

    Delicata Squash + Kale Salad with Yogurt Dressing

    Warming salads with a creamy dressing always make me feel so much more satisfied than the raw, crunchy ones with light vinaigrettes. I love how delicata squash tastes in this dish, but feel free to use any squash that is easy for you to find/cook. Dairy yogurt is obviously out of the question during Whole 30, but coconut yogurt is a go (just make sure that it is unsweetened). It will be perfect to have on hand for the dressing in this recipe and as a breakfast/snack option.

    Spiced Pumpkin Pecan Milk

    Store-bought nut milks often contain thickening agents, preservatives and sweeteners- lot’s of Whole 30 no-no’s! If you don’t already make your own, this. is the perfect time to get in the habit. It will save you money in the long run and taste better. This recipe is made using an Almond Cow nut milk machine (you can use code ALLTHEVERDURE for $15 off and free shipping!) which makes the process super easy. Note that this recipe calls for vanilla extract, which would have to be eliminated or substituted with vanilla bean powder to be Whole 30 compliant.

      This is another great warming salad option! You can make the cauliflower and tahini on it’s own as a side dish or make it a meal by serving it on a salad, as the recipe calls for. Tahini is a deliciously creamy and Whole 30 approved condiment. You’ll want to make extra dressing to use on other veggies, salads and even as a dip!

      Coconut Yogurt Tzatziki

      My typical snacks are almost all no-nos on Whole 30, especially the ones I put together snack boards with (chickpea hummus, store-bought chips, cheese, crackers, etc.). This dip is a tasty snack to have on hand and would make a great addition while entertaining during your Whole 30 stint! I love it paired with roasted veggies and homemade chips! Try thinly slicing potatoes or another root veggie to get your chip and dip fix while avoiding the bagged ones.

      What I thought was a “no smoothie” rule held me back from doing Whole 30 for a while, until I realized what was behind it. The program discourages smoothies for 2 reasons: 1. They can be fruit bombs packed with sugar 2. Drinking food is not the same as eating it. I figured this veggie packed smoothie bowl, eaten with a spoon, is the perfect way to “do a smoothie” if you are going to while on Whole 30! Again, note that this recipe calls for vanilla extract, which would have to be eliminated or substituted with vanilla bean powder to be Whole 30 compliant. You could also try using raw cacao powder instead, since that is also allowed.

      Superfood Choco-latte

      I find that often when I am craving dessert, it’s actually a sign that my body needs something in desserts besides sugar. Chocolate, fat, fruit- these are some common ingredients that have important benefits our bodies in fact need. Making a cup of something rich, nutrient dense, chocolatey and a little sweet is the perfect way to end the evening instead of your after dinner dessert while doing Whole 30.

      I know what you’re thinking- tomato sauce on Whole 30? But I can’t eat pasta! Well friend, there is a lot we can do with tomato sauce during this 30 days! One idea pictured at the bottom of the recipe is to put it over meatballs and greens like broccoli rabe. You could also make a chicken parm with a Whole 30 compliant nut cheese, which would be super tasty! For vegetarians, try enjoying it over zucchini noodles by spiralizing a zucchini or finding them in the prepared produce section of the store.

      Basil Avocado “Cream”

      This is another Whole 30 compliant dip that is a great snack option with raw veggies or homemade chips! You could also add a scoop to a salad or on top of a piece of chicken- so tasty! Because of the lime juice, it doesn’t brown quickly like a sliced avocado, so you can prep a few days worth and store in an airtight container like a mason jar in the fridge.

      Sweet Potato + Parsnip Bone Broth Soup

      This soup is one of my favorites for winter! Bone broth is super nourishing and great for building immunity. I love adding a crunch and some greens to make it a meal by topping it with some roasted Brussel sprout leaves. Other Whole 30 approved soup topper ideas are: avocado, Whole 30 compliant nut milk cheese, hemp seeds and coconut yogurt.

      It probably doesn't surprise you that I'm one of those- who are more into the commercials and the snacks than the game. I have truly never been able to get into sports, especially football, but am always down for a reason to whip up a few apps.       Individualized Diets are the New "Diets"

      My journey of testing endless recommended diets and finally finding relief from an elimination diet and listening to my own body.

      I was told to avoid cauliflower and many other of my good foods as part of a Low FODMOP diet (find this cauliflower in my recipes!)

      The Struggle.

      Diet. I hate that word. It has such a negative connotation for many to mean a restrictive meal plan of misery. In reality, diet just describes how and what we eat and can be such a positive and empowering part of life when the right diet is discovered. 

      I was never able to find a certain diet that made me feel best. I have spent most of my life suffering from IBS, asthma, eczema and allergies, all which can be improved and managed (to some extent) with diet. However, after trying out several different recommended diets, nothing seemed to help. 

      At first I avoided dairy because that was the obvious trigger, but there was something still bothering me. My doctors recommended following a Low FODMOP diet, saying that was the only way to guarantee managing my IBS through diet. I could not find complete relief from that either. I have spent spells being plant based, gluten free and many other recommended diets, but none have been completely right for me.

      New Hope.

      Finally, I was recommended to do a blood test that would enable me to find out which foods agreed with me and which didn't. I was skeptical because it sounded too easy and good to be true. I was right. While the test does exist, it required commitment to a lengthy elimination diet to test which foods truly react best with your system. 

      The test is called the MRT Food Sensitivity Test, which is given in conjunction with the LEAP ImmunoCalm Dietary Management Plan. Essentially, you find out which foods have are reactive, moderately reactive or non-reactive with your blood. The non-reactive foods are the ones you should stick to eating to feel your best. The moderately reactive foods should be avoided, especially in combination, which can exacerbate their negative health effects. The reactive foods should be strictly avoided.

      The Journey.

      When I got my results, some were obvious, while others took me by surprise. My only reactive food way soy. I had already been trying to avoid processed soy which is added to endless processed foods, so I knew strictly avoiding it at all times including while dining out and traveling would be a true challenge. Dairy was moderately reactive, which surprised me that there was something worse, since this was the only food I had ever been able to pinpoint, Common foods and spices like onions, cayenne pepper, mustard and chicken were all moderately reactive. Finally it all made sense to me- I have probably always been having some sneaky soy in my diet and in addition have been combining tons of moderately reactive foods into every meal.

      The elimination diet instructs you to test the non-reactives and avoid the moderately reactives. I decided to notice how I felt eating the non-reactives that I usually eat and then proceed to test them if I did not feel okay. I felt okay with all of the non-reactives so I decided to test the moderately reactives to see which ones I needed to avoid more than others. This process has helped me to understand which foods I personally need to avoid and which ones help me feel best. At home I cook with only non-reactive foods, which is impossible to do out of the house. However, I know which foods to avoid at all costs and how to ensure I am not eating too many of my moderately reactive foods together and exacerbating their effects. 

      The Takeaway.

      The takeaway is- the diet I was told to follow by doctors- Low FODMOP instructs not to eat garlic, asparagus, cabbage, cauliflower and many other of my most non-reactive foods that I have found to help me feel best. While this blood test is not for everyone and can also be expensive, I hope others consider doing some form of an elimination diet rather than blindly following trending diets. 

      The answers are not always obvious or what the media/organizations portray as the most healthy, but they have helped me feel my most healthy. For example, I used to avoid red meat and ate white meat if I ate meat. I discovered that lamb and beef are two of my least reactive foods in comparison to other meats, many types of fish and vegetables. I now may eat a big juicy steak and fries (white potatoes are my least reactive compared to sweets) while dining out to feel my best. Obviously it would not be healthy to eat this every night, but in moderation and with its reactiveness to my body, this can be the right choice for me. I have finally, after a long journey found some relief. While I do not always feel perfect, I feel good knowing that I am in control and not a helpless bystander to how food affects my body.

      Dairy Free Yogurt + Nice Cream

      Being vegan or dairy free is a far stretch from having to kiss your yogurt and ice cream loving days goodbye. A few years ago I had major FOMO that it seemed like Manhattan was the only place I could get my ice cream fix without compromising my lactose sensitive diet. Now delicious tasting vegan ice cream is no longer hard to find, but instead hard to decide where to begin.

      Yogurt options have also expanded and improved vastly over the past few years. When I first eliminated my daily Greek yogurt from my diet, I was disappointed with the dairy free alternatives. Recently I have rekindled my love of yogurt with some great new vegan options. Here are my favorites based on taste and ingredients.

      HipCityVeg- HipCityVeg is DC and Philly's By Chef Chloe. The entire menu is vegan and delicious. Their banana "whips" are customizable sundaes made with just banana. They also serve a milkshake made with soy ice cream.

      Van Leeuwen- In the cities of endless dairy free ice cream options, this one takes the cake (or cone in this instance). The consistency of their vegan ice creams taste almost identical to regular ice creams and their flavors are top notch. With a list ranging from salted caramel (my fave) to banana nut, there's something for everyone. In addition to weekly regular ice cream flavors, they have a special vegan flavor. The best part is the fact that they have scoop truck locations that serve their vegan flavors as well!

      Midwest Winner

      Nana CremeThis awesome banana based vegan ice cream line has ice cream, cookie dough and ice cream cookie sandwiches available in organic grocery stores in Illinois, Indiana, Kentucky, Michigan and Missouri, as well as online. I am currently obsessed with their Brownie Nana Creme.

      Coconut Bliss- of all of the lines that seem to be commonly available in most Whole Foods I have been to, this is by far the best ingredients and flavors. My favorite is their chocolate chip cookie pint.

      DIY

      Yonanas- This device makes helps you turn froze fruit and your choice of condiments into a bowl of nice cream. I love mixing frozen bananas, raw peanut butter and topping it with cacao nibs. 

      YOGURT

      • Kite Hill- Kite Hill yogurts are made with almond milk and are completely dairy free. The pros of this brand are the consistency which is similar to regular yogurt. Another pro is that they are made with probiotic cultures, which are great for digestive health. The reason I have not stuck to this brand as my go-to yogurt is because all of their yogurts, including the plain one, are made with cane sugar. I do not think yogurt needs sugar, but a healthier alternative would be to add raw honey to yogurt.

      • So Delicious- So Delicious has majorly improved their yogurt. I tried it years ago and was not a fan, but decided to give it another go recently. I love the unsweetened coconut yogurt. They have different flavors, but the unsweetened option has minimal sugar and tastes coconutty with a great consistency.

      I forget how I first heard about Sakara Life, but I think it was right when they began delivering to DC. I was so tempted to try the Plant-Based, Vegan, Gluten-free meal delivery service. I was shocked that food that met all of those strict dietary standards could look and sound so incredibly delicious. At the time, I felt it wasn't worth it because living in DuPont Cicle, I had tons of equally delicious and healthy counter restaurants that had pick up and deliver. 

      Now, living in Louisville, we have less options for healthy and quick meals. That was part of my motivation. The other parts were that I wanted some ideas and inspiration for plant-based eating and I also wanted a break from cooking 3 meals a day every week for a while. 

      I will detail the Sakara Life meals' pros and cons. I recommend it for anyone who is trying to learn how to or try to eat plant-based meals, food snobs who want to try healthy food that is actually beautiful and delicious, and those who do not have time to make or local businesses that create on the go healthy meals.

      The Pros:

      • Everything came packaged perfectly. All items were intact and cold when they were delivered. The containers kept parts of the meal separate to ensure freshness.

      • It came with morning rose and mineral, as well as night chlorella water. It also was a special promo that came with Sakara Life probiotics. There were packets of two detox teas for each day, which I absolutely loved and want to re-order.

      • I thought I would have to supplement the meals a lot more than I did. I kept some fresh, raw fruits and veggies to snack on or add to some of the meals, but was always satiated and happy with how they came.

      • The meals are probably enough food for most men as well. My husband who runs 7 miles and goes to Crossfit every day did it with me. He likes having eggs for breakfast so he stuck with that and had his breakfast pastries/granola as desserts after dinner. I thought I would have to add extra protein to his meals for him, but he didn't need it. I think he is the exception since he burns so many calories, but most men could probably stick with the breakfast as is.

      • The meals were all beautiful, colorful and tasty. A couple of them surprised me. I saw them in the package and wasn't sure how they would taste, but once I put everything together it all made sense.

      • The dressings are what really make it taste so good. Their homemade dressings taste like they should be bad for you but are quite healthy for the most part.

      • Community support is another great aspect of joining Sakara Life meal delivery. I posted many of the meals on social media and received supportive comments from others doing the program and the founders themselves.

      • I like how it indicates which meals taste better heated. I rearranged the meals based on which ones I would be able to heat in a toaster or not (not necessary to heat though).

      • Each item tells some interesting fact or quote that has to do with whatever superfood is in the meal.

      • The food was all creative and really different. Instead of avocado toast there was a cool turmeric and beet toast. Instead of plain almond milk for the granola, there was green spirulina mylk.

      The Cons:

      • Some meals needed slight supplements (not necessary though). I added fresh berries to each breakfast and cucumbers/tomatoes to a couple of the salads. For people like my husband, you may have to add more protein to your breakfast.

      • Some of the dressings had added sugar. I can only recall one or two that had straight up sugar and a couple that had more natural forms like maple syrup. I usually make my own dressings and do not add sugar to them. It can make them taste better, but I don think it's necessary if you add enough other flavors.

      Overall, I would say that Sakara Life was totally worth it! The meals were great and packed with superfoods and nutrients. They were easy to take on the go, and saved so much time not having to "meal prep" or cook breakfast/dinner that week. It was fun doing it as a household with my husband, so we could both still eat the same dinner and reap the benefits of having some extra time! We will probably try to do Sakara meals once a month or so when we have a really busy week.
